perfect form, we’re talking about saltwater
abs — abalones — not six packs here.
Aquaculturists working with California’s
Monterey Abalone Company developed a
natural diet of red algae to fatten up the
tasty shellfish that has upped the growth
rate by a whopping 25 percent. Not only
that, the red algae that now fills out the
basic kelp diet produces a farmed abalone
with an attractive red hue and rich flavor.
“Our biggest interest was in looking
for an alternative sustainable source of
winter feed,” explains co-owner Trevor
Fay. That spurred the company to enlist
Michael Graham, a Moss Landing Marine
Laboratories scientist, and graduate
student Thew Suskiewicz in the quest for
the perfect farmed abalone. The abalone
need only as little as two-and-a-half
percent to a maximum of five percent of
red algae in their diet to show dramatic
